These vegan "Quesadillas"/ Wraps are prepared very quickly and easily with just a few ingredients. They are filled with delicious peppers, irresistible guacamole, vegan "chicken" and melted cheese. I am pretty sure that your mouth has already started to water. So let's get started!
Since I can remember I have always loved anything that you could eat with a tortilla!
My mother used to make them for us, even when I was still very little. Back then the whole table would be packed with delicious fillings and fresh vegetables. Everyone would fill up their wrap with whatever they wanted (and with how much would fit) and roll up their tortilla.
Those are some of the best memories I have of family dinners.
As I grew older I of course realized that the way my mother used to make tortillas was not the only one. So I started to try out every possible way to use tortillas, from fajitas to burritos and I can honestly say, I love each and every one of them! Is there anything better than to put ab bunch of the stuff you love to eat most all together in a tortilla and just wrap it up?
These vegan "Quesadillas" are basically a mixture of the original Mexican Fajitas and a Quesadilla. The original Quesadilla is folded differently so that's why this one is not 100% accurate, but it's just such an easy way to fold a wrap.
The delicious pepper and onion filling that I put into this wrap is inspired by the filling you would put in an authentic fajita.
The basic ingredients for the fillings are peppers, onions, avocado, and a meat substitute of your choice. I used a Chicken substitute from the company "Like Meat".

Cut it up to the middle. This works Divide into quarters and fill each quarter
best with a pizza cutter. with one of the fillings.

Fold the lower left corner on top of the Then fold the left corner on top of the
upper left corner. upper right corner.
Step 5:
Just fold the remaining piece and you're done!!!
